Taste the Season: A Maple Moment for Your March Table

🍁 March in Waterloo Region means one thing: maple season is here. ❄️ The snow still clings to the ground, but the sap is rising — and our corner of Ontario is about to produce some of the finest maple syrup 🍯 in the world.

🍽️ This month’s recipe puts local maple syrup front and centre — caramelized, earthy, and surprisingly elegant.

Introducing: Maple-Glazed Roasted Carrots with Thyme and Toasted Pecans. It sounds simple because it is — and that is precisely the point.

Why This Dish, Why Now

🥕 Carrots are one of the most underestimated vegetables in the kitchen. Roasted at high heat, their sugars concentrate, their edges caramelize, and they pair beautifully with real Ontario maple syrup.

⏱️ Ready in under 40 minutes, it works as a weeknight side, a potluck dish, or part of a spring gathering spread. No special skills required — just a hot oven and a bottle of the good stuff.

🍁 Local Tip: Look for Grade A Dark syrup from a local sugar bush — it has a robust, caramel-forward flavour that shines when cooked. 📍 Check out the Elmira Maple Syrup Festival or Sweet Creek Sugar Bush nearby.

The Recipe

Maple-Glazed Roasted Carrots with Thyme & Toasted Pecans

Serves 4  •  Prep: 10 min  •  Cook: 30 min  •  Total: ~40 min

Ingredients

  • 6 large carrots, peeled and halved lengthwise

  • 3 tbsp pure Ontario maple syrup (Grade A Dark recommended)

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 2 garlic cloves, minced

  • 5 fresh thyme sprigs

  • ¼ cup pecans, roughly chopped

  • ½ tsp salt

  • ¼ tsp freshly ground black pepper

  • 2 tbsp crumbled goat cheese (optional, but lovely)

Method

  1. 🔥 Heat the oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

  2. 🍯 Make the glaze: In a small bowl, whisk together the maple syrup, olive oil, apple cider vinegar, and minced garlic. Season with salt and pepper.

  3. 🥕 Coat the carrots: Arrange the carrot halves cut side up on the prepared baking sheet. Pour the glaze over them and turn to coat evenly. Scatter the thyme sprigs on top.

  4. ⏲️ Roast: Place the tray in the oven and roast for 25–30 minutes, flipping the carrots once halfway through, until they are tender, golden, and caramelized at the edges.

  5. 🥘 Toast the pecans: While the carrots roast, add the pecans to a dry skillet over medium heat. Toast for 3–4 minutes, stirring frequently, until golden and fragrant. Watch them carefully — they go from golden to burnt quickly. Remove from heat.

  6. ✨ Serve: Transfer the roasted carrots to a serving platter. Scatter the toasted pecans over top and finish with crumbled goat cheese if using. Serve warm and enjoy.

Make It Your Own

💪 Swap pecans for walnuts or pumpkin seeds, use dried thyme at half the quantity, or skip the goat cheese to keep it vegan. Add a pinch of chili flakes 🌶️ to the glaze for a little heat.

❄️ Leftovers keep for up to three days — reheat at 350°F or serve cold over a grain bowl.

🍁 Happy maple syrup season, Waterloo Region — it’s good to be here for another one.
