🥫 Ingredients
🌟 For the Filling:
✔ 1 tablespoon olive oil
✔ 1-pound lean ground beef
✔ 1 onion, chopped
✔ 2 bell peppers, chopped
✔ 1 (15-oz) can black beans, drained and rinsed
✔ 1 (4-oz) can diced green chiles
✔ 3 tablespoons taco seasoning
✔ Salt and pepper to taste
🌟 For Assembly:
✔ 12-14 large flour tortillas
✔ 1½ cups shredded cheddar cheese
✔ 1½ cups shredded Monterey Jack cheese
✔ 2 green onions, sliced
✔ Sour cream and Pico de Gallo for serving
🌟 Instructions
Make the Filling:
1️⃣ Heat oil in a large skillet over medium heat. Add beef and cook until browned, 4-5 minutes, breaking it apart as it cooks.
2️⃣ Stir in onion, peppers, beans, and chiles. Cook until vegetables soften, about 5-6 minutes.
3️⃣ Add taco seasoning and ¼ cup water. Cook until the liquid has evaporated, about 3-4 minutes. Season with salt and pepper.
Assemble:
4️⃣ Preheat oven to 375°F. Arrange tortillas around the edges of a half sheet pan so half of each hangs over the sides. Place one tortilla in the center to cover the bottom.
5️⃣ Spread beef mixture evenly over tortillas. Top with both cheeses and green onions.
6️⃣ Place another tortilla in the center on top, then fold the overhanging tortillas inward to seal.
Bake:
7️⃣Place a second sheet pan on top. Bake 20 minutes, remove the top pan, and bake 15 minutes more until golden and crispy.
8️⃣Slice into squares and serve with sour cream and Pico de Gallo.
🌟 Tips & Variations
✔ Make it ahead: Assemble and refrigerate up to a few hours before baking.
✔ Try chicken: Use rotisserie chicken instead of beef for a quick swap.
✔ Go vegetarian: Skip the meat and add extra veggies like zucchini, mushrooms, corn, or plant-based crumbles.
✔ Storage: Refrigerate leftovers up to 3 days or freeze up to 2 months. Reheat in the oven to re-crisp the tortillas.
This recipe is perfect for busy nights when you need something satisfying without a lot of fuss. Your family will love it!
