Easy Peach Galette with Puff Pastry

Nothing says summer like a free-form peach galette that comes together with almost no effort. Skip the mess and bother of rolling dough! This version starts with ready-to-use puff pastry and ends with a golden, bubbly fruit dessert that tastes like you spent hours in the kitchen.

What you’ll need

- Pre-rolled butter puff pastry

- Fresh peach slices

- Brown sugar, cinnamon & cornstarch

- 1 egg (for brushing)

- Coarse sugar

- Melted butter

Puff pastry sources (our top picks):

Gr8 Value Butter Puff Pastry, Tenderflake Puff Pastry, Compliments Butter Puff Pastry, or our favourite - PC Butter Puff Pastry. Available at Walmart, Zehrs, and Sobeys.

Method

1️Prep the pastry

Unroll your puff pastry and gently press it into the base of a skillet or baking pan, letting it rise slightly up the sides.

2️Mix the spice blend

In a small bowl, stir together cinnamon, brown sugar, and cornstarch until evenly combined.

3️Build the base

Scatter half of the cinnamon-sugar mixture across the bottom of the pastry. This creates flavour and helps keep the crust from turning soggy.

4️Arrange the peaches

Lay the peach slices in a spiral or neat rows, slightly overlapping them so every bite looks (and tastes) abundant.

5️Finish the filling

Dust the remaining spice mixture over the fruit, then drizzle with melted butter.

6️Fold the edges

Lift the pastry borders and fold them inward over the peaches, creating a rustic, free-form crust all the way around.

7️Egg wash & sparkle

Brush the exposed pastry with a lightly whisked egg and sprinkle generously with coarse sugar for that signature golden crunch.

8️Bake until bubbling

Slide into a hot oven and bake until the crust is deep golden and the filling is bubbling and fragrant. Let it rest a few minutes, then serve warm with a scoop of ice cream or a cloud of whipped cream.

Simple, fragrant, and impossible to mess up - this is peak summer baking with zero fuss. Enjoy it at your cottage on Conestogo Lake, at a backyard BBQ at your home in Kitchener, or sharing it with friends on a Saturday night at your condo in Uptown Waterloo.
